Chapter 6: Fifty
2024Bidhan reached fifty years in 2024. Two outlets, one sweets kitchen, and a menu that still opens with the same tiffin it opened with in 1974. What is different is the scale; what is not different is the method.
The issue
Fifty years is a number a shop should be careful with. It is easy to say and hard to earn, and the only reason to mention it is that it is checkable: the address has not moved, the family has not changed, and the recipe that settled in 1982 is the recipe on the tray this morning.
What has changed since 2021 is mostly infrastructure — delivery, listings, a website. What has not changed is that the milk arrives before dawn, the chhena is set by hand, and nothing is bought in and re-labelled.
The counters are open every day. That is still the best way to check any of this.

Why we publish the history rather than a blog
Every chapter here carries a date, a number or a document — and says so plainly when a year is only approximate. That is a harder thing to write than an adjective, and it is the only kind of history worth reading from a shop.
